ReplyDeleteI do think it is interesting that so many young kids egg allergies. I also think that it is surprising that egg allergies are linked to eczema. Upon further research I have learned that egg allergy patients are able to eat baked eggs. For patients with egg allergy to eat eggs they must be cooked at 350 degrees F for 30 minutes. Therefore, egg allergy patients can eat break and cakes as ovalbumin is broken down when baked. I wonder if patients that eat baked eggs have the same linkage between eczema and the egg allergies because of a similar in tolerance to the ovalbumin found in egg whites.
